South Tyrolean spinach dumplings

Recipe for hungry hikers

In every valley and at every altitude in South Tyrol you will find friendly hosts and delicious specialties. This also includes South Tyrolean spinach dumplings. With this recipe you can bring a piece of South Tyrol into your own four walls. Or at least onto the plate. Whether in spring, summer, autumn or winter – this dish from the south side of the Alps tastes good in every season.

Ingredients

  • 300g frozen spinach, 750g fresh
  • 300g dumpling bread (white)
  • Salt, nutmeg, fresh herbs
  • 150ml milk
  • 3 eggs
  • 50g butter
  • 1 onion
  • 1 to 2 cloves of garlic
  • 2 tbsp breadcrumbs or flour
  • Butter and parmesan

Method

  1. Blanch fresh spinach, drain well and cut or defrost frozen spinach
  2. Wisk the milk and eggs together
  3. Salt the dumpling bread and pour the egg milk over it, add the spinach and spices.
  4. Finely chop onions and garlic and sauté in butter. Then add it to the dumpling mixture.
  5. Mix everything well and let it steep. Depending on the firmness of the mixture, add a little milk or breadcrumbs.
  6. Shape dumplings with wet hands and let them cook in simmering (not boiling) water for 20 minutes.
  7. Serve the spinach dumplings with hot butter, freshly grated parmesan and green salad.
